Cilantro, fresh, chopped 1/2 cup
Parsley, fresh, chopped 1/2 cup
Lemon juice, divided 3 fl. oz. + 2 tsp.
Olive oil, divided 5 fl. oz. + 1 Tbsp.
Garlic, minced 1 Tbsp.
Salt, divided 3/4 tsp.
Cucumber, peeled, 1/2-inch dice 6 oz.
Cherry tomatoes, halved 6 oz.
Red onion, quartered, sliced 3 oz.
Falafel, prepared, 1-1/2 oz. each 18 each
Tzatziki sauce, prepared 12 oz.
Preparation Instructions:
Step 1
Prepare grain blend according to package instructions. Chill.
Step 2
In a medium-size bowl combine cilantro, parsley, 3 fl. oz. lemon juice, 5 fl. oz. olive oil, garlic, and 1/2 tsp. salt. Stir in chilled grains, cover and let mixture marinate for at least 30 minutes before serving.
Step 3
Combine cucumber, tomato and red onion. Season with 2 tsp. lemon juice, 1 Tbsp. olive oil, and 1/4 tsp. salt. Set aside for service. Cook falafel balls according to package instructions, hold warm.
Step 4
For each serving; place 6-1/2 oz. (1 cup) grain blend in a serving bowl. Add 2-1/2 oz. cucumber-tomato salad, 3 falafel balls, and 2 oz. Tzatziki sauce.
