Loaded with turkey and vegetables, then topped off with Simplot Spudsters® Butter Flavored Mashed Potato Bites and cheese, this hearty dish is the perfect lunch for fall and winter menus.

Vegetable oil 2 fl. oz. 1/4 cup
Simplot Simple Goodness™: Mirepoix Vegetable Blend 3/8"x3/8" 12 oz.
Turkey, ground 2 lbs.
Garlic powder 2 tsp.
Black pepper, ground 1 tsp.
Simplot Simple Goodness™: RTE Peas 1/20lb 8 oz. 2 cups
Tomato pasta sauce 14 fl. oz.
Simplot Spudsters® Fried Potatoes: Butter Flavored Mashed Potato Bites 4/5lb 2 lbs.
Cheddar & Monterey Jack cheese blend, shredded 2 oz. 1/2 cup
Preparation Instructions:
Step 1
Preheat oven to 425°F.
Step 2
In a large skillet, combine the oil, vegetable blend and turkey, cook over medium-high heat until the turkey is cooked through. Drain if needed. Season with garlic powder and pepper. Add peas and tomato sauce. Return to a simmer and transfer to a 2-inch half hotel pan. Top with a single layer of Spudsters® and sprinkle with cheese. Bake for 15-20 minutes until the potato bites are heated through and cheese on top is golden brown and melted. Allow to stand for 5 minutes before serving.
