Indian Broccoli and Chickpea Dal

Indian Broccoli

A flavorful (and spicy) grain and vegetable dish that works perfectly as a vegetarian entrée or as a side dish to grilled protein.

Olive oil 1 fl. oz.
Simplot Good Grains™: Couscous, Red Quinoa and Vegetable Blend 6/2.5lb 40 oz.
Simplot Simple Goodness™: Pearl Onions IQF 12/2.5lb 4 oz.
Simplot Simple Goodness™: Broccoli Florets, IQF 12/2lb 8 oz.
Chickpeas, drained 15 oz.
Vegetable broth 6 fl. oz.
Serrano chile, minced 1 Tbsp.
Salt, coarse 2 tsp.
Cumin, ground 2 tsp.
Turmeric, ground 2 tsp.
Mustard seed 1 tsp.
Green onion, sliced 2 Tbsp.
Preparation Instructions:
Step 1
Heat olive oil in a large non-stick skillet over medium-high heat, add Cous-Cous Red Quinoa & Vegetable Blend, pearl onions and broccoli. Cook until warmed through.
Step 2
Add in chickpeas. Cook until hot. Pour in vegetable broth to deglaze pan and gain thick viscosity.
Step 3
Add in chiles and spices. Simmer until flavors bloom. Adjust seasoning. Garnish with green onion and serve.
