Simplot Harvest Fresh™ Avocados: Western Guacamole, Frozen 6/3lb 1.25 lbs.
Simplot RoastWorks®: RTE Flame-Roasted Pineapple & Pepper Blend 6/2.5lb 1.875 lbs.
Simplot Conquest® Fries: Clear Coated Crispy Potato Strips 3/16" x 1" 4.375 lbs.
Coconut curry cream sauce, prepared 5 cups
Cooked shrimp, chopped into small pieces 1.25 lbs.
Fresh cilantro, chopped 10 Tbsp.
Fresh lime wedge 10 each
Preparation Instructions:
Step 1
Thaw guacamole according to package instructions.
Step 2
Prepare pineapple and pepper blend according to package instructions.
Step 3
For each serving; prepare approximately 7 oz. potato strips according to packaging instructions. Use a tall round mold, like a #10 can, paint can with both ends cut off or other container. Position the open-ended can on serving dish. Fill container to create bottom layer and tap to settle. Top with ½ cup warm coconut curry sauce, 2 oz. guacamole, 2 oz. shrimp, 2 ½ oz. pineapple salsa and 1 Tbsp. cilantro. Repeat the process again until well layered.
Step 4
Carefully remove the can mold to reveal a loaded potato stack. Garnish with two lime wedges.
