Grab a spoon and take this delicious—and filling—lunch with you. Don't forget to bring a napkin.

Ingredient Weight Measure
Simplot Harvest Fresh™ Avocados: Western Guacamole, Frozen 12/1lb 20 oz.
Simplot Good Grains™/RoastWorks® Vegetables Vegetable Chili 40 oz.
Fritos® or Doritos® chips, individual 2 oz. bag portions 10 count
Sharp cheddar cheese, shredded 10 oz.
Salsa or fresh pico de gallo 5 oz.
Cilantro, chopped 10 Tbsp.
Sour cream (thinned with a small amount of water) 5 oz.
Green onions, sliced 10 Tbsp.
Preparation Instructions:
Step 1
Thaw guacamole according to package instructions.
Step 2
Make a vegetable chili utilizing Simplot Good Grains™ and Simplot RoastWorks® items.
Step 3
Cut bag of chips 1/3 the way across with scissors. Pour 4 oz. vegetable chili over chips. Top with 1 oz. cheese, 1/2 oz. salsa or pico de gallo and 1 Tbsp. cilantro. Top with 2 oz. guacamole and 1/2 oz. sour cream. Garnish with 1 Tbsp. green onions. Serve.
