Preparation Instructions:
- Step 1
- Combine the sour cream, chipotles and milk in a blender, purée until smooth. Transfer to a squeeze bottle.
- Step 2
- For each serving; sauté 3 oz. of chorizo in a skillet until cooked thoroughly, drain excess fat and reserve warm. Prepare 4 oz. sweet potato gems according to package instructions. Layer gems, 2 fried eggs, chorizo, 2 oz. cheese and 1 Tbsp green onion in a serving dish. Garnish with 1 Tbsp. of cilantro. Serve chipotle sauce on the side.
