Here's our version of a sweet potato breakfast hash served in a skillet—what a hearty, flavorful way to get the day started.

Chipotle Sauce

Sour cream 8 oz.
Chipotle chiles in adobo, canned, puréed 2 Tbsp.
Milk 2 fl. oz.

Chorizo 32 oz.
Simplot Sweets® Fries: Sweet Potato Gems 6/2.5lb 40 oz.
Eggs, fried 20 each
Sharp cheddar cheese, shredded 20 oz.
Green onion, sliced 3 oz.
Cilantro, chopped 8 Tbsp.
Preparation Instructions:
Step 1
Combine the sour cream, chipotles and milk in a blender, purée until smooth. Transfer to a squeeze bottle.
Step 2
For each serving; sauté 3 oz. of chorizo in a skillet until cooked thoroughly, drain excess fat and reserve warm. Prepare 4 oz. sweet potato gems according to package instructions. Layer gems, 2 fried eggs, chorizo, 2 oz. cheese and 1 Tbsp green onion in a serving dish. Garnish with 1 Tbsp. of cilantro. Serve chipotle sauce on the side.
