Fajitas are a no-brainer for your takeout and family-style menus. This delicious entrée is easily customized and if you pack the sides separately, it travels incredibly well.

Ingredient Weight Measure
Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 16 oz.
Canola oil 1 fl. oz.
Beef, top sirloin, sliced in thin strips 24 oz.
Lemon juice 1 fl. oz.
Garlic, minced 2 tsp.
Cumin, ground 1 1/2 tsp.
Kosher salt 1 tsp.
Chili powder 1/2 tsp.
Red pepper flakes 1/2 tsp.
Simplot RoastWorks®: RTE Flame-Roasted Unseasoned Peppers & Onions Blend 3/8" 12 oz.
Flour tortillas, 6-inch 8 oz. 8 each
Cheddar cheese, shredded 8 oz. 2 cups
Cilantro, fresh (optional) as needed
Jalapeño, fresh, sliced (optional) as needed
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Heat oil in a large skillet over medium-high heat. Add beef and brown on both sides. Reduce heat to medium and add lemon juice, garlic, cumin, salt, chili powder and red pepper flakes. Add pepper and onion blend, cover and cook until meat and vegetables are heated through.
Step 3
Warm tortillas. Spoon beef mixture down the center of each tortilla. Serve with avocado and cheese. Serve cilantro and jalapeño on the side (optional).
