Ingredient Weight Measure
Mexican crema 6 fl. oz.
Lime zest 1 tsp.
Lime juice 2 fl. oz.
Simplot RoastWorks®: RTE Flame-Roasted Simply Sweet® Cut Corn 1/20lb 6 oz.
Simplot Harvest Fresh™ Avocados: Avocado Halves, Frozen 12/2lb 14 each
Hearty whole-grain bread slices 24 slices
Salt to taste
Tajin seasoning to taste
Black pepper to taste
Micro greens as garnish
Edible flowers as garnish
Preparation Instructions:
Step 1
Whisk the crema with the lime zest and juice. Set aside for service.
Step 2
Thaw avocado halves according to package instruction. Cut each half into thin slices.
Step 3
Prepare corn according to package instructions. Set aside for service.
Step 4
For each serving, lightly toast 2 slices of bread. Arrange 1-1/2 oz. of avocado slices, and 1/4 oz. corn on each piece of bread. Drizzle each piece with 1 tsp. lime crema. Season with Tajin, salt and pepper. Garnish with microgreens and flowers. Serve.
