All the flavors that you know and love in a taco with a tasty veggie twist; SIDEWINDERS™ Fries. The only question is how many of these should you make? (The correct answer is a lot!)

Ingredient Weight Measure
Sour cream 4 oz.
Chipotle peppers in adobo, pureed 1 oz.
Simplot RoastWorks®: Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5lb 6 oz.
Pico de gallo 4 oz.
Simplot RoastWorks®: RTE Flame-Roasted Peppers & Onions Blend 6/2.5lb 10 oz.
Cheddar cheese, shredded 5 oz.
Pepper jack cheese, shredded 5 oz.
Flour tortillas 6-inch 20 count
Simplot SIDEWINDERS™ Fries: Original Cut Clear Coated SIDEWINDERS™ Fries Original Cut 4 lb.
Preparation Instructions:
Step 1
Combine sour cream and chipotle peppers. Reserve in a squeeze bottle.
Step 2
Prepare Corn and Black Bean Fiesta blend according to package instructions. Allow to come to room temperature. Blend with pico de gallo. Reserve.
Step 3
Prepare pepper and onion blend according to package instructions. Reserve.
Step 4
Blend cheeses together and set aside. Warm tortillas.
Step 5
Prepare SIDEWINDERS™ Fries according to package instructions. Reserve warm.
Step 6
To build tacos, place two SIDEWINDERS™ Fries in a tortilla. Top with 1/2 oz. peppers and onions, 1/2 oz. shredded cheese, and 1/2 oz. Corn and Black Bean Fiesta and pico de gallo blend. Drizzle with 1/4 oz. chipotle sour cream. Repeat to complete all tacos and serve.
