Preparation Instructions:
- Step 1
- Prepare sweet potatoes and black beans according to package instructions. Reserve hot.
- Step 2
- For each serving; place corn tortilla in serving container and top with 1/4 cup black beans and 1/2 cup sweet potatoes. Finish with 1/2 cup of scrambled eggs and 1/4 cup cheese. Serve with 1/4 cup of salsa.
