Elevate your appetizer or game day menu with this dish. Loaded with tender brisket, Tater Gems®, peppers and onions, two kinds of cheese, and topped off with pickled jalapeños and green onions—it's sure to be a winner.

Simplot RoastWorks®: RTE Flame-Roasted Unseasoned Peppers & Onions Blend 3/8" 32 oz.
Simplot Traditional Potatoes: Tater Gems® 6/5lb 80 oz. 1 bag
Beef brisket, prepared, chopped 32 oz.
White queso cheese, warmed 32 oz.
Jalapeños, pickled, drained 8 oz.
Cotija cheese, crumbled 4 oz.
Green onions, thinly sliced 8 Tbsp.
Preparation Instructions:
Step 1
Preheat oven to 350˚F.
Step 2
Prepare peppers and onions according to package instructions. Set aside. Prepare 10 oz. Tater Gems® according to package instructions.
Step 3
Line a half sheet pan with parchment paper. Top with a #303 clean, empty can with a 6-inch diameter that has had the top and bottom removed. Spray the inside of the can with pan release. For each serving: In several layers, combine 10 oz. Tater Gems®, 4 oz. chopped brisket, 4 oz. queso and 4 oz. peppers and onions in the can. Bake for 5-10 minutes until golden and heated through. Remove from oven. Using a wide spatula, transfer can to serving dish. Lift can and allow contents to spill from the bottom. Top with 1/2 oz. Cotija cheese, 1 oz. pickled jalapeños and 1 Tbsp. green onions.
