SIDEWINDERS™ Fries Junior Cuts paired with Cajun-style fried fish, shrimp and a tasty house-made secret sauce.

Ingredient Weight Measure
Sweet chili sauce 4 fl. oz.
Mayonnaise 4 fl. oz.
Lemon juice, freshly squeezed 1/2 fl. oz.
Salt to taste
Pepper to taste
Cajun seafood batter mix, prepared as needed
Catfish, or other white fleshed fish 16 oz.
Shrimp, 16/20, peeled and deveined, tail on 16 oz.

Preparation Instructions:
Step 1
Preheat deep fryer to 350˚F.
Step 2
In a small bowl combine sweet chili sauce, mayonnaise and lemon juice. Season to taste with salt & pepper. Refrigerate for service.
Step 3
Prepare seafood batter mix according to package instructions. Cut catfish into 2 oz. pieces. Using prepared batter, cook catfish and shrimp in deep fryer until golden and cooked through. Hold warm. Prepare fries according to package instructions. Hold warm.
Step 4
For each portion; place 4 oz. fish, 4 oz. shrimp and 6 oz. fries on a serving platter. Serve with 2 fl. oz. prepared sauce on the side.
